Any of you knife nuts take your skills to task and shave with a straight razor? Shame on you if not.

I use ceramic rods, sharpening kit that's older than I am. I can shave hairs with any of my knives. I have mostly made in china crap, I get a few every time I go to china town. All I know is that when you buy a knife, it's likely as sharp as it will ever be unless you change the hone by whatever means. And then "Sharpening" is more like realigning the edge. So I just get knives that are sharp when I purchase them, and sharpen and clean them once a week.
