What file type are the video files? The ipod should be able to read any AAC or Mp3 for music, and Mp4 for video. You may also have to convert it.

well one thing that could be wrong is although the videos play on your itunes, they arent the correct files for your ipod, for videos shorter than 2 minutes i use viddyup a nice demo software but if you want anything more than 2 minutes you need to buy it, if you dont want to do this then look around the web to find file converting programs or apps, theirs alot of them out there ill try to find one for you
for you to play videos, the video has to be ether MPEG-4 or H.264. iTunes does not have a built in converter so you'll have to find one on your own. You dont have to have playlists to put music in your ipod. You can just set itunes up so it can sync every thing or make it manual. Hope this helps.
